I just found a really good use for leftover banh hoi. I cut it into even smaller squares and cooked them into an omelet with mock crab and white cheddar. The egg soaked up into spaces in the banh hoi for a nice effect. I suspect soaking bigger pieces in beaten egg and then cooking them up would also be good.
